Auberge Resorts Collection has announced that Collegio alla Querce in Italy is accepting reservations ahead of its opening on March 2, 2025. This 16th-century property rests on a hillside above Florence’s Centro Storico (Historic Center).
Looking over the Piazza del Duomo, Collegio alla Querce was a center of learning for more than 100 years. The 83-room hotel, upon opening, will offer five dining venues including Bar Bertelli in the former principal’s office, and an Auberge Spa. Collegio alla Querce, Auberge Resorts Collection will have 66 Guest and Estate Rooms, 16 Suites and a 2,300-square-foot Quercia Suite. Outdoors, four levels of historic terraced gardens lead to the pool and its oak-fringed bar and restaurant.
The hotel’s accommodations fuse modern design with the buildings’ original features, from hand-painted frescoes to coffered wood ceilings. Locally sourced materials and contemporary furnishings complement antiques and original artworks. The individually named Suites offer living and dining areas, stone bathrooms with large picture windows, and private balconies or terraces. Incorporated into the seven-bedroom, privately accessed Palazzo Moderno or booked on its own, the signature Quercia Suite encompasses two living rooms, two bathrooms, a butler’s kitchen, rooftop terrace and private plunge pool.
Destination restaurant La Gamella will serve seasonal Italian classics for breakfast, lunch and dinner. The Chef’s Table at its heart is a convivial space to engage with the chef, learn through cooking masterclasses and enjoy an evening aperitivo. The atrium-inspired Conservatorio offers all-day dining, transitioning from a sun-filled space for morning coffee and café-style lunches to an intimate evening space for small plates and light dinners. The poolside restaurant and bar, Café Focolare, serves pizzas, pastas, burgers, Florence’s famed panini and more beneath a vine-covered trellis.
Bar Bertelli, once the headmaster’s office, offers hand-rolled Italian cigars, cocktails and light bites. Pretty cool: Exotic memorabilia from the school’s original natural history archives and science laboratories, including a seismograph and collection of geological treasures, feature in the decor and four glass cases at the entrance.
Aelia, the hotel’s Auberge Spa, will house four treatment suites, two of which have a private pool and one with a private steam room. Guests can enjoy therapeutic treatments inspired by Tuscan traditions and nourishing infusions sourced from organic gardens.
The hotel offers a range of indoor and outdoor event venues including Terrazza dell’Arco, the outdoor event lawn; the 14-seat Refettorio Private Dining Room; La Cappella, the restored chapel; and Il Teatro, the original theater with a stage and wraparound balcony. The Conservatorio’s adjacent library rooms will play host an art salon series and are well-suited for semi-private gatherings.
Collegio alla Querce, Auberge Resorts Collection offers a range of activities including chef-led cooking classes, truffle-hunting excursions, private wine tasting at local vineyards and more. The hotel will host local wine-makers and chefs for immersive dining experiences, as well as musical talent for supper club-style performances at Il Teatro, alongside writers, designers and artists for workshops in the Conservatorio.
